Avocado Fritters

As our spring break draws to a close, I thought I’d share this lovely gem of a recipe and  a cautionary tale.

As I mentioned in my previous post, my son is pretty much obsessed with everything TMNT. By obsessed I mean that he uses every tubular shaped object he can find (particularly paper towel rolls) and practices his ninja moves to the DVD menu screens of all the Ninja Turtles movies every single day. He whips around the living room with a look on his face like he was personally assigned the duty of protecting all of mankind by the President himself. It’s all fun and games until someone gets hurt right? Well that’s precisely what happened not long ago.

We were spending the day at Tiffany’s house, and my son decided to show off his sick nunchucks skills because he had a fresh audience (duh!). His weapon of choice today: Tiffany’s Roku remote. You know, the kind that has a loop on it, like a little lanyard. He started swinging that remote around at warp speed, really getting into his performance. This was it, the big time. The chance to save us all. Suddenly, we heard the sharp crack of the Roku remote hit him dead in the face and he was instantly a little boy again- no longer the brave warrior he had been training to be for months. So, as I consoled him and wiped his tears I thought to myself: you know what IS good smashed up? Avocados :]!

With that, I developed this yummy recipe for avocado fritters that I know you’ll love.
It’s pretty simple, perfect for Keto and low carb, and just plain awesome.

Avocado Fritters:

  • 1 ripe avocado
  • 1 egg
  • 2 tbsp mayo
  • 1/4 cup shredded parmesan cheese (or shredded cheese of your choice :])
  • 1/2 tsp salt
  • 1/8 cup almond flour
  • 1 tbsp (or more) ghee or coconut oil (for frying)

Add all ingredients except ghee or coconut oil to blender or food processor.

Blend until well combined.

In skillet over medium heat melt ghee or coconut oil. Scoop out avocado fritter batter and slowly pour into pan in palm sized circles, like little pancakes. Cook about two to three minutes each side, making sure they are golden to dark brown before flipping.
Repeat until all batter is gone. Makes about 8 avocado fritters. About 2 net carbs per serving.
