Coconut Macadamia Fat Bombs & Becoming Keto Crazy

So, the beginning of spring marked the beginning of a new obsession, I mean adventure, for Tiffany & I. More accurately, I discovered Keto and drug her along with me :]. I came across Keto on accident. I was doing my daily scroll through Pinterest when I found a recipe for something called a fat bomb that looked delicious so naturally I pinned it, clicked through to the blog responsible for said delicious pin, and perused over the ingredients. Suddenly as I was reading, the word KETO jumped off the page at me. Of course I had seen it around on other pins, but never knew what it meant. Basically, if it didn’t say the words “Paleo” or “Whole 30” on it, I wasn’t interested (I’m ashamed to say). So, I mentally bookmarked the word for later Googling and finished reading the recipe.

Discovering Keto has been so monumental for me so far. I feel great, satiated, and more in control of my eating habits. The weight loss hasn’t been too shabby either :]. Also, the Keto community is so inspiring and supportive, it’s truly wonderful.

Tiffany is my ride or die, so naturally she was on board day one. We are on this journey together, and I can’t wait to see what effect Keto has on her health adventure as well. Now, on to the BOMB.

I really enjoyed making and eating these because they only have 4 ingredients and taste incredible. They fill me up, stay good in the fridge for about two weeks, and pack a serious fat punch. I hope they help someone else along on their Keto journey (or get someone interested, like that first fat bomb pin did for me!)!

Coconut Macadamia Fat Bombs-

 

  • 1 1/2 cups unsweetened coconut
  • 1 cup macadamia nuts
  • 1/2 cup melted coconut oil
  • 3 tablespoons shelled hemp seeds

Prepare silicone candy mold or mini muffin liners.

Add all ingredients to the bowl of a food processor, and pulse until you have a creamy texture. The end result should be a little bit gritty, like raw nut butter.

Gently pour batter into prepared molds or liners and freeze for one hour or refrigerate for three.

Keep refrigerated.
