Ode To The Fish Cake: Not Your Granny’s Salmon Patty.

Who doesn’t like a good salmon patty, or tuna cake right? Finding a good one however can be the challenge. Myself, I only liked my Granny’s salmon cakes and there was no substitution. Recently I wanted some of her good ole “salmon patties”, and knowing I could NEVER duplicate I decided to reinvent the fish cake and try my own spin on it. The results: Coconut Crusted Tuna Cakes and a Happy Apple Salmon Patties. Sure they weren’t Granny’s but they were equally as fantastic. Both of these recipes can be adapted to fit your nutritional needs,the specific ingredients I have used are based upon a clean, paleo, or even a ketogenic diet. 

Ingredients:

  • 1 can/pouch of tuna in water
  • 1 egg
  • Zest of a whole lemon
  • Juice of half of your lemon
  • 1 tbs coconut flour 
  • 1 tbs mayo (I use Primal Kitchen Mayo)
  • 1 tsp Mrs. Dash Original original 
  • 1 cup unsweetened shredded coconut
  • Salt and pepper to taste

Directions:

  1. Mix all your ingredients except your shredded coconut in a bowl.
  2. Place coconut in a flat vessel for breeding. 
  3. Place olive oil in a frying pan and heat to low/med for a slow steady cooking.
  4. Spoon out one at a time a hefty tbs of your mix onto your coconut and gently bread your patty.I like to use another spoon to cover my cake. 
  5. Gently place patty in your hot pan and cook on one side 4-5 mins until ready to flip. Then flip and cook another 4-5 mins.

I like to pair this cake with Tessemaes Honey Balsamic for dipping and it is amazing!!! I could eat this sauce on shoe leather but seriously it pairs really well with this Tuna Cake. Yield–about 6 cakes.



My husband cooks a mean slab of salmon and uses a spicy honey glaze which gave me the idea for this little nugget of yumm! 

Ingredients:

  • 1 can of salmon (I get the boneless)
  • 1/2 sweet onion finely chopped
  • 1 tbs Mayo
  • 1 med Apple finely chopped (I used pink lady’s 🙂
  • 1/4 tsp cayenne pepper powder
  • Salt and pepper to taste 
  • 1 egg
  • 1 cup almond meal 
  • 1 tbs almond flour 

Directions:

  1. Mix all ingredients minus your almond meal in a bowl and follow the same process as the previous recipe. 
  2. Crust in your almond flour allowing to cook on each side for 4-5 mins. 

Sauce:

  • 2 tbs Mayo
  • 1 tbs olive oil
  • 1/4 tsp cayenne pepper powder 
  • 1/2 tsp of honey (optional) 

Just mix all this well in a bowl and drizzle over or get messy and dip these patty 🙂 so good! Yeild–about 6 cakes.
