Zero Carb Almond Dill Chicken Salad (and lessons learned about camper life with 2 kiddos).
This week is spring break for our little Tennessee town, which means travel for the kids and I to Pennsylvania to spend the week with my husband while he works. Spring break also means spending it in a camper with two kids for 24 hours a day (except for the odd trip to the store). Don’t get me wrong, I’m so glad that we get to spend this
week together as a family. However, one mom can only watch Teenage Mutant Ninja Turtles (all of them, 1990-present) so many times before her brain starts to unravel and pull apart at the seams.

Seriously, I would welcome some Barney right about now. Bring on the sing- along’s. Send some Wiggles my way, I beg of you! This week has given me a ton of extra time to dive more deeply into Keto (my new obsession-family and friends prepare to be annoyed :] ) and develop recipes for it. My favorite so far this week has definitely been the Zero Carb Almond Dill Chicken Salad. Hubby had some chicken that needed to be used in the fridge when we got here so I decided to throw together a quick and Keto friendly chicken salad that I could eat for lunches during the day and he could also take with him to work. (I’m attempting to get him on the Keto train and failing miserably). Here it is, I hope you enjoy it, and I pray that you aren’t reading this post from Children’s Show Purgatory, where I presently find myself :D!

Zero Carb Almond Dill Chicken Salad:

  • 2 lbs boneless skinless chicken breast
  • 1 cup mayo
  • 1/4 cup mustard
  • 1/2 tbsp onion salt
  • 1/2 tbsp black pepper
  • 1 tbsp dill weed
  • 1/2 cup chopped onion
  • 1/4 cup sliced raw almonds

Boil chicken until thoroughly cooked through, shred or dice chicken and place in large mixing bowl.

Add all remaining ingredients and mix well.
– Enjoy by itself or on your favorite low carb bread (like the delicious one we used from ketoconnect)
-Cover with plastic wrap and keep refrigerated up to 3 days
